MINI LEMON BUNDT CAKES WITH CREAM CHEESE FROSTING

Ingredients
Mini Lemon Bundt Cakes:
- 1 ¼ c butter softened to room temperature
- 2 ¼ c sugar
- 4 eggs
- 1 Tbsp vanilla
- 2 c white rice flour*
- 1 c tapioca starch*
- 1 ½ tsp xanthan gum*
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 c buttermilk
- ⅓ c lemon juice
- ¼ c lemon zest finely chopped
Cream Cheese Frosting:
- 4 tbsp cream cheese softened to room temperature
- 2 tbsp butter softened to room temperature
- 3 c powdered sugar
- 1 tsp vanilla clear
- 2 Tbsp milk
