MINI LEMON BUNDT CAKES WITH CREAM CHEESE FROSTING



Mini Lemon Bundt Cakes with Cream Cheese Frosting make a wonderful Easter or Spring dessert recipe.  Fresh lemon juice and lemon zest give these mini cakes their delicious flavor!

Servings : 24 mini bundt cakes

Ingredients
Mini Lemon Bundt Cakes:

  • 1 ¼ c butter softened to room temperature
  • 2 ¼ c sugar
  • 4 eggs
  • 1 Tbsp vanilla
  • 2 c white rice flour*
  • 1 c tapioca starch*
  • 1 ½ tsp xanthan gum*
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 c buttermilk
  • ⅓ c lemon juice
  • ¼ c lemon zest finely chopped

Cream Cheese Frosting:

  • 4 tbsp cream cheese softened to room temperature
  • 2 tbsp butter softened to room temperature
  • 3 c powdered sugar
  • 1 tsp vanilla clear
  • 2 Tbsp milk
